A healthy makeover of an old-time favourite.

Directions

  1. Hard boil 12 eggs letting them cook in cold water.
  2. Blend all other ingredients together until smooth.
  3. Peel eggs and slice in half and remove yolks.
  4. Fill halves with chickpea mixture and sprinkle with paprika.

Ingredients

  • 12 Eggs
  • 1 Can Chickpeas
  • 2 Tbsp Light Mayonnaise
  • 1 Tbsp White Vinegar
  • 2 Tbsp Mustard
  • ¼ Tsp Cayenne Pepper
  • 3 Tbsp Scallions, Minced
  • ¼ Tsp Paprika Salt, to Taste
