A healthy makeover of an old-time favourite.
- Hard boil 12 eggs letting them cook in cold water.
- Blend all other ingredients together until smooth.
- Peel eggs and slice in half and remove yolks.
- Fill halves with chickpea mixture and sprinkle with paprika.

- 1 Can Chickpeas
- 2 Tbsp Light Mayonnaise
- 1 Tbsp White Vinegar
- 2 Tbsp Mustard
- ¼ Tsp Cayenne Pepper
- 3 Tbsp Scallions, Minced
- ¼ Tsp Paprika Salt, to Taste
