Grilled Halibut with Mashed Potatoes
Delicious! Especially paired with our parmesan roasted asparagus recipe.
Preheat grill to medium-high heat.
Season halibut with salt and pepper. Place skin side down on grill.
Cook the halibut for 5 to 6 mins per side or until the fish is thoroughly cooked through to 140° F.
Let rest for 5-10 mins. Reheat mashed potatoes until hot.
Plate asparagus and make a bed of mashed potatoes. Add halibut and drizzle sauce on top. Garnish with parsley sprig and lemon wedge.
FOR THE SAUCE: Place 4 tbsp of butter, along with garlic in a small
sauté pan. Cook the butter over medium heat until the butter no longer
is ‘frothy’.At this point, the butter and garlic will be a dark brown colour.
Immediately remove butter mixture from heat, add remaining butter and
lemon juice and stir to combine. Set aside.
- 2 halibut fillets, approx. 6oz each
- 1 lb mashed potatoes
- 6 tbsp cold butter, cubed
- 3 tbsp lemon juice
- 1 tbsp garlic
- 1 tbsp olive oil
- Kosher salt and cracked black pepper,
- Lemon wedge, to garnish
- Parsley sprig, to garnish
