Roasted Curried Broccoli
Preheat oven to 400°F. Grind all spices in spice grinder or mortar
& pestle. Set aside.
Bub broccoli crowns liberally with vegetable oil, as well as spice mixture.
Roast in shallow roasting pan for 15-20 mins or until fork-tender.
Remove from oven, carefully remove stalk using a pair of tongs &
a paring knife.
Garnish with slivered almonds and chopped cilantro, as well as a
dollop of yogurt.
- 2 whole broccoli crowns, washed & trimmed
- 1 tsp cumin
- 1 tsp garam masala
- 1 tbsp coriander seeds
- 1 tsp fennel seeds
- 1 tsp garlic powder
