Mango Salsa
Enjoy on its own with chips or as a topping for grilled fish!
Ingredients
2 cups plum tomatoes, seeded and diced
1 ½ cups diced peeled ripe mango
½ cup diced red bell pepper
½ cup diced red onion
½ cup chopped fresh cilantro
3 tablespoons fresh lime juice
1 teaspoon sugar
Salt and Pepper, to taste
Directions
Combine all ingredients in a bowl and mix well
Adjust salt and pepper as needed
Serve with tortilla chips, use it in a fish taco, or serve alongside grilled fish
