Sweet & Savoury Halibut

Ingredients
- 1 lb fresh halibut fillets
- 2 tbsp honey
- 1/2 lemon, juiced
- 2 tsp soy sauce
- 1/2 tsp pepper
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 2 tbsp unsalted butter
Directions
In a small mixing bowl, combine the honey, lemon juice, soy sauce, pepper, and garlic. Pat halibut dry and brush both sides with the liquid mixture.
Heat oil in a large skillet over medium-high heat & cook halibut until a golden brown crust has formed, about 4 minutes. Flip and cook another minute, just to finish cooking and to sear the other side (until the fish can be easily flaked with a fork). Turn off heat and add butter to the skillet. Tilt skillet and spoon foaming butter over fillets for another minute.
