Baked Coronation Grape Pancake Recipe

This baked pancake is one of our farm favourites and makes a delicious addition to brunch, breakfast, or dessert. Sweet Coronation grapes create a juicy filling beneath a light, golden pancake that is best enjoyed fresh from the oven.

Ingredients
1 cup Coronation grapes
¼ cup granulated sugar
2 tbsp butter
½ cup all-purpose flour
Dash of salt
½ cup milk
2 eggs, lightly beaten
Icing sugar, for dusting
Directions

Step 2: Butter a 9-inch ovenproof baking dish or deep pie plate.

Step 3: In a skillet over medium heat, combine the grapes, sugar, and butter. Cook for 2 to 3 minutes, stirring frequently, until the sugar has melted and the grapes are evenly coated.

Step 4: In a mixing bowl, whisk together the flour, salt, milk, and eggs until smooth.

Step 5: Arrange the grape mixture in an even layer in the prepared baking dish.

Step 6: Pour the batter evenly over the grapes.

Step 7: Bake for 20 minutes, or until the pancake is puffed and golden brown.

Step 8: Cut into wedges, dust with icing sugar, and serve immediately.

Serving Suggestion

Serve warm as part of a brunch spread, or enjoy as a simple dessert with a scoop of vanilla ice cream or a dollop of whipped cream.
