Step 1: Preheat and Prepare the Pie Plate

Preheat your oven to 350°F (180°C). Lightly grease a 9-inch pie plate and set it aside for later use.

Step 2: Prepare the Egg Mixture

In a bowl, beat together the eggs, milk, and fresh dill. Once combined, set the mixture aside.

Step 3: Prepare the Vegetables

Cut the asparagus spears in half, and then slice them lengthwise to create thin strips.

Step 4: Layer the Ingredients

Arrange the potato rounds evenly over the bottom of the prepared pie plate. Lay the smoked salmon lox on top of the potatoes. Pour the egg mixture over the layered potatoes and salmon.

Step 5: Add Toppings

Place the asparagus spears on top of the egg mixture, fanning them out from the center like bicycle spokes. Sprinkle crumbled goat cheese over the top.

Step 6: Bake

Bake in the preheated oven for 20–25 minutes, or until the center is set and the top is lightly golden.

Step 7: Garnish and Serve

Garnish with additional fresh dill. Serve warm, paired with a fresh green salad for a complete meal.
