Ingredients
2 cups almond milk
8 tbsp chia seeds
½ cup frozen blueberries, mashed
1 tbsp maple syrup
½ tsp vanilla extract
Pinch of ground cinnamon
2 cups fresh blueberries (about ½ cup per serving), for topping
Directions

Step 1: In a medium bowl, whisk together the almond milk, chia seeds, mashed frozen blueberries, maple syrup, vanilla extract, and cinnamon until well combined.

Step 2: Divide the mixture evenly among 4 ramekins or serving bowls.

Step 3: Cover and refrigerate until set, at least 4 hours or overnight.

Step 4: Before serving, top each pudding with ½ cup fresh blueberries.

 

Step 5: For extra texture and freshness, garnish with a few fresh mint leaves before serving.
