1 tablespoon vegetable oil

Chopped green onion, for garnish
Directions

Recipe Introduction: Rich, buttery sablefish is gently poached with savoury miso, fresh ginger, and red onion for a flavourful meal that comes together quickly. Finished with sesame seeds and green onion, this simple seafood recipe is ideal for an easy weeknight dinner or an elevated meal at home.

Step 1: In a small bowl, whisk the miso paste with ¾ cup hot water until combined. Set aside.

Step 2: Heat the sesame oil and vegetable oil in a lidded skillet over medium heat.

Step 3: Add the sliced red onion and ginger. Sauté for approximately 2 minutes, taking care to keep the onion segments together.

Step 4: Place the sablefish fillets skin-side down over the onions.

Step 5: Pour half of the prepared miso liquid into the skillet.

Step 6: Reduce the heat to a gentle simmer and cover the skillet with a lid.

Step 7: Poach the sablefish for 8–10 minutes, depending on the thickness of the fillets, until the fish is cooked through and flakes easily.

Step 8: Transfer the sablefish to serving plates. Spoon approximately 2 tablespoons of the hot poaching liquid over each fillet.

Step 9: Garnish with sesame seeds and chopped green onion. Serve immediately.

Serving Suggestion: Serve the sablefish with steamed rice and your favourite green vegetables for a complete and satisfying meal.

Why You'll Love It: Rich, buttery sablefish pairs beautifully with savoury miso, aromatic ginger, and sweet red onion. Gentle poaching keeps the fish moist and tender while creating a flavourful sauce with minimal effort.

Fresh St. Market Tip: Sablefish has a naturally rich, buttery texture, so gentle poaching helps keep the fillets moist and tender. Avoid boiling the poaching liquid, and begin checking the fish at the eight-minute mark to prevent overcooking.
