Directions

Step 1: Cook the Quinoa

Bring water to a boil. Add quinoa, reduce heat, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes.

Step 2: Marinate the Tuna

Combine the marinade ingredients in a zip-lock bag. Add the tuna steaks, seal the bag, and turn to coat. Refrigerate for 30–60 minutes.

Step 3: Prepare the Quinoa Salad

Add tomatoes, mint, parsley, onion, green onion, olives, and capers to the cooked quinoa. In a separate bowl, whisk together lemon juice, olive oil, and salt. Drizzle the dressing over the quinoa salad and toss to coat evenly.

Step 4: Grill the Tuna

Place the tuna steaks on a hot, oiled grill rack. Grill for 2 minutes per side, or until cooked to your liking.

Step 5: Assemble and Serve

Serve each tuna steak on top of 1½ cups of the quinoa salad. Enjoy immediately.
